Friday night I wanted to make something for my boyfriend and I for dinner so I opted for some stir fry. So easy to make and technically it should feed about 4 but we like to eat :-) You can really customize it to make it however you want but I will list exactly what I used!

2-3 medium sized peppers
1 medium yellow or white onion
1 lb chicken (breast or tenders)
1 jar General Tsao sauce

So for my recipe, I used one medium yellow onion, a red pepper, and an orange pepper, but you can really use any kind you'd like. I bought my General Tsao sauce from Trader Joe's. Love it there.

I sliced the onion and peppers and cooked them in some oil over medium-high heat to cook through until the onions turned slightly translucent and the peppers browned a little. Take them off and transfer to a plate.

Next, I chop the chicken (I used tenders as I find them easier to work with) and I cook them through in the same pan until they brown.
When the chicken is cooked through, I add the vegetables back in with the chicken and add the sauce. I head it through until its all incorporated. Side note, I added a little bit of sriracha sauce into it as well.
While this was being done, I cooked up some brown rice so I could put the stir fry on top of it. It turned out great and was super easy to make!

• Cook peppers and onion on medium-high heat with oil until onions are translucent and peppers are slightly charred. Remove vegetables from pan onto plate
• Add chicken into pan and cook thoroughly until browned
• Add vegetables back into pan and add General Tsao sauce
• Heat through and serve over rice
