For some reason I was craving some cupcakes today. Something simple, but something that I'll want seconds and thirds of, lol. Here's my recipe for simple vanilla cupcakes with some amazing chocolate buttercream frosting. YUM.
For the cupcakes:
(Yield 12 cupcakes)
Ingredients:
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 large eggs, room temperature
2/3 cup sugar
1 1/2 sticks unsalted butter, melted
2 teaspoons vanilla extract
1/2 cup milk
Directions:
Preheat oven to 350 degrees and line a cupcake tin with 12 cupcake liners.
For the cupcakes:

First, you want to stir together the flour, baking powder and salt together in a medium bowl.
In another medium bowl, beat the eggs and sugar with an electric mixer for about 2 minutes or until it becomes light and foamy.
While you're beating the eggs and sugar, gradually add in the melted butter and vanilla.
Slowly add in half of the dry mixture and blend together. Add in all of the milk and then mix in the rest of the dry ingredients.
Now, eat all of the batter without even baking the cupcakes...I mean, what?
Divide evenly into the muffin tin and bake for 18-20 minutes, or until a toothpick can be inserted and come out clean.
IT'S FROSTING TIME PEOPLE.
Chocolate Buttercream Frosting
Yield: about 3 3/4 cups
Ingredients:
6 teaspoons unsalted butter
2 2/3 cup confectioners sugar
1/2 cup cocoa
1/3 cup milk
1 1/2 teaspoons vanilla extract

Directions:
Add the butter to a medium bowl and blend until creamy.
Add sugar and cocoa and mix well. (I usually add a little bit of confectioners sugar at a time so it doesn't go flying everywhere...I've made that mistake before...oops)
Add milk in small portions and stir each time. Add vanilla, mix well and viola! Easy chocolate buttercream frosting. Now spread that bad boy on those cupcakes.
